PAVEL KANJA - THE CHEF

Born and trained in Australia, Pavel’s 21-year career in kitchens has taken him around the world, to cities as diverse as Dubai, Stockholm and Accra. For the past eight years, he has focused on contemporary Japanese cooking, spending three years at London’s Wabi, as well as stints at Roka, Nobu and Mirai. A chance meeting of minds led him to start planning Flat Three with business partner Juliana Kim Moustakas, a restaurant which opened in April 2015 in Holland Park, serving a menu influenced by Japanese, Korean and Scandinavian cuisines. He also has a knack for dusting.

Laura Sheffield is another one of those beautiful hospitality stories which starts in the fashion closet of some glossy magazine, and ends with her running three sections on a busy Sunday brunch because half her staff called in sick.
