ELLEN MCDOUGAL & PAOLO LANCINI

We are very excited to be working at the truly gorgeous Ellory!
A big thank you to the team for the use of their space and a
massive congratulations on all their success thus far.

For this months Sunday Session we have London based couple; Paolo Lancini & Ellen McDougal.

Paolo hails from Italy where he started cooking at the age of 17, working in high and low end restaurants in his hometown of Lombardy. After working his way up to sous chef at 22, Paolo left to explore the vast restaurant land of London. Since arriving, he has spent time Upstairs at The Ten Bells, staging throughout the city and currently calls Peckham's lauded Mediterranean haunt - Artusi, home. For his menu with Eighty Six List, we see him draw influence from both Italy and England, using his imagination to curate unique dishes utilising the best of what is in season.

Pairing the wines on the night is Ellen, who after a short stint in the corporate world found herself in a restaurant. It all started Upstairs at The Ten Bells (so it seems something else was started there...) and it wasn't long before the spark was lit. She followed Upstairs with a stint at 10 Cases before moving to Lyle's, where she fell head over heels for minimal intervention wines and small prodcution vineyards. She says 'It's the stories behind the wine, the families working together and the risks individuals take to produce wines full of love, made with care and unique characteristics' which draw her to wine.

Please join them for a truly special evening.

***Due to the one off nature of this event we are unable to accomodate allergies & dietary requirements.

LYLE'S MISFITS

SOLD OUT

Lyle's Misfits
Sunday 26th February
18.30pm | Legs
120 Morning Lane, London E9 6LH

We are very excited to be kicking off 2017 with a fantastic quartet from
industry favourite, Lyle's.

Bent Varming (sous chef), Nominoe Guillebot (wine boss),
Anna Higham (pastry chef) & Freddie Janssen (marketing manager).

Lyle's Misfits

After two years of working with James Lowe at Lyle's, Bent left his position as sous chef earlier this month. As if his leaving party - that ended in shots of Jager and 5am salt beef bagels - wasn’t enough, the Lyle’s crew have decided to throw Bent a second party, only this time, make him work it. He'll be dishing out a series of plates which take inspiration from his Nordic background, but funked up a bit.

While Freddie might be known as the queen of all things pickled and taco'd, she's been staging around town and nosing in some kitchens, expect some of your favourites with a little taste of what is to come. The very talented Anna, will be styling out not one, but two desserts with all that she has learned during her time at Petrus, Gramercy Tavern and her current home.

Lastly, after an epic tour in France last week, Nomi has ordered in a bunch of hidden gems for everyone to get down with, #LylesStyle.

Their mashup of cultural heritage (Danish, French, Scottish and Dutch)
should prove for an interesting menu.

We'll be setting up shop for our evening of mischief at Legswho have so kindly lent us their amazing space. Seats are limited, so
book yours NOW!

Tickets are £30 which includes a drink on arrival or
£45 which includes a wine pairing for the evening.

The menu will be announced a few days ahead of the dinner on @eightysixlist.

From left to right: Albert Blaize of The Clove Club & Simon Ulph of Thompson's

Our November Sunday Session brings together two fiercely passionate people of the industry. Coming up from the Isle of Wight, where he has been working at Thompson's with Robert Thompson for the past year, is Simon Ulph. Simon is a dedicated chef who previously worked alongside Brunswick House's own Andrew Clarke at The Swan on West Malling, two years at 1 Michelin star, The Hambrough and several stages in London & New York before spending a year at Morimoto in Napa Valley. His cooking takes inspiration from all his travels, but he enjoys sticking to classical techniques with a hint of modernity. We thought it was perfect to pair Simon with London based sommelier, Albert Blaize of The Clove Club (26th in The 50 Best Restaurants in the World, 1 Michelin star) who shares a similar approach when it comes to wine and pairings. Albert is a relaxed sommelier who really enjoys engaging with guests, he appreciates working with sustainably produced wines of both a classical and contemporary approach. Originally situated in Manchester, Blaize says, 'I'm introducing a new exciting estate in from Wales and a delicious homemade blackcurrant leaf wine.'

The event takes place with Natalia Ribbe & Jackson Boxer at Brunswick House, starting at 6.30pm with drinks and snacks, sitting to eat at 7pm.

Tickets are £30 including menu & paring.

BLAIR HAMMOND & MATT OTTLEY

Eighty Six List is excited to be hosting their last Sunday Session of the summer before taking a short break to recharge for an amazing line up in the autumn. After hosting Daniel Gibeon of Silo in March, we knew there was more talent to be found in Brighton, which is where Canadian born chef, Blair Hammond and London born bartender, Matt Ottley are working. Blair will be cooking up a menu that is a true reflection of his passion for the industry and one that highlights all he has learned over the years, whether that's his travels to Japan working with Shinobu Namae at L'effervecence, the zero waste approach at Silo or Momofuku in Toronto. Blair's partner in crime on this occasion is bartender, Matt Ottley, who has created a serious cocktail pairing for each one of Blair’s dishes. The two work together at The Salt Room and you can see they are truly ones to watch!

"I'm all about attempting to surprise and excite people by creating new flavours through modern infusion techniques and unconventional garnishes. Blair and I sat down together and went through his menu to come up with some pairing flavours that would compliment his dishes through mixed drinks, which is my forté, as opposed to more conventional wine pairings normally offered with tasting menus.” - Matt Ottley

SILO X WHITE LYAN

SUNDAY SESSION
13TH MARCH

BRUNSWICK HOUSE | 6.30PM

Silo's Daniel Gibeon is coming down to the Big Smoke to give us a sliver of what he has been learning in the zero waste restaurant Douglas McMaster set-up in Brighton. With a strong focus on fermentation and seasonality, it's clear Dan has drunk the koolaid, or in this case, the kombucha.

Robin Honhold of Mr. Lyan will be at the helm of the beverages this eve, introducing their latest addition, wine. The evening will kick off with a cocktail created by Robin, but throughout dinner guests will be poured glasses of 'grapeless wine' - all having been made right in the heart of Hoxton.

Daniel Gibeon - Silo Brighton
Cooking since age 14, with his professional start in mid-Sussex restaurant, Jeremy's, Dan has also worked at another Brighton favourite, 64 Degrees.
His favourite colour is blue.

Robin Honhold - Mr. Lyan
Robin is the Operations Manager for Mr. Lyan Ltd and has been the Venue Manager at White Lyan until recently. His work has focussed a great deal around fermentation in cocktails and he will be serving the house made "grapeless" wines from the White Lyan menu along with a welcome drink.

FEBRUARY 8TH - 6.30PM

We hope you all had some well-deserved time off over the holiday, and if you didn't have a break, we hope there is one coming soon. If we could we would relocate Ladies of Restaurants to Hawaii for you, but we haven't got the budget. So instead we've decided to give it a mild and significantly local make-over. We are going to be taking our monthly gatherings back to the mothership, the mothership of course being restaurants. We really want to make an occasion of it, wine and dine together in some of our favourite places. All this done in the hopes we can better connect the community, meet new people, help each other and as always, learn something new. It's essentially like what we did before, but with better wine.

For our first L.O.R. of 2016, the lovely folk at 10 Greek Street will play host in their private room on Monday 8th February 6.30pm.

They have kindly offered a 3 course feasting menu with a glass of Nyetimber on arrival, no corkage and service included for...£50! So have a look in your cellar or pop over to Passione Vino and pick up a bottle :)

We will have a very loose format for the evening, each month tackling a new topic.

This month we will discuss...

What happens when I want to leave the floor?
A new year might mean a new you, and that may mean a new job.
Where do I go next? Server to Manager? Manager to Chef? Chef to PR?
We are just as confused as you are!
Please come with advice, grievances, solutions and of course a healthy appetite.

There are 12 seats available, so please RSVP to ladiesofrestaurants@gmail.com if you are able to come.

See you all soon!

to Nov 23

SUNDAY SESSION AT BRUNSWICK HOUSE

5 courses. 2 cocktails. Wine. £30.

We are back at Brunswick House for another debauched night of food and fun. This time with their former Junior Sous Chef, Drew Snaith at the helm. Drew has worked or performed a stage in just about every kitchen including, Le Manoir Aux'Quat Saisons, Alinea and Restaurant Sat Bains. Much like our last guest chef, Drew is leaving London to continue his culinary education, so we thought we'd get him on board before losing him to the continent.

Max Chater is overseeing our cocktail for the night, but rather then welcome you with an aperitif he's going to match a drink with one of Drew's dishes. Max has worked at some of our favourite watering holes, including Whistling Shop and BUMP Caves.

For a little bit of fun and bonding, Jackson Boxer and yours truly (Natalia Ribbe) will be selecting the wine.

Can't make it until later?  No worries!
Come down from 8pm and we will have the bar stocked and the tunes playing.
