AT BOROUGH MARKET
During the month of June we are very excited to announce we will be hosting four different chefs who have yet to open their own restaurants, at Borough Market’s event space in 1, Cathedral Street. Each chef will put together a pop-up showcasing what they would do if (or when) they have a permanent site.

Thursday to Saturday (One seating)
Dinner £50 (includes drink on arrival, snacks, three courses and pairing)
Lunch £35 (includes drink on arrival, snacks three courses and optional pairing for £15)
Snackbar with Freddie Janssen & Sebastian Myers
Freddie is the author of Pickled, mastermind behind Lyle’s PR and marketing and has been running pop ups under the banner ‘F.A.T. by Freddie.’ Sebastian previously worked at Chiltern Firehouse and Sager + Wilde Restaurant before taking a position to head up the food at The Laughing Heart Cave. The two came together following their taco parties last summer in East London, and ahead of their forthcoming restaurant, Snackbar, the two will showcase some #InternationalPartyFood which they will cook up once their site is landed.
L.C. with Leandro Carreira & Cameron Dewar
Leandro Carreira, who cut his teeth at Andoni Luis Aduriz’s famed Mugaritz, before coming to London and working at Nuno Mendes’ Viajante as Head Chef, and later at Lyle's and Koya. Leandro joins us fresh from his critically acclaimed year long pop up at Climpson’s Arch in Hackney - L.C at Climpsons’ Arch - and will be hosting the event with his manager-sommelier Cameron Dewar, who worked with Leandro at both Viajante and Climpson’s Arch. Leandro and Cameron’s highly anticipated restaurant will open its doors this Autumn and will observe the flavours, traditions and ingredients from Leandro’s native Portugal, through the eyes of a chef that now calls London home.
Maxine Thompson (Polka Pants) is a native Australian who turned her love of cooking and fashion into a career. After training at the French Culinary Institute in New York she worked at Blanca, the upscale tasting menu concept in Roberta’s in Brooklyn before moving to London three years ago and launching her tailored trousers for women who work specifically in the hospitality industry called Polka Pants. She is also the recipient of the Young British Foodie award for her contribution to the food and drink industry. Her menu will be inspired by her love of Italian and Japanese cuisine, and the beverage pairing will be curated by Natalia Ribbe-Szrok who also worked in New York before moving to London in 2012. Natalia’s passion for the industry and love of wine has encouraged her to work alongside Maxine to create a pairing using wines from Central and Eastern Europe where she spent her teenage years as an expat.
Sadly we have had to cancel this pop up due to the terrible events which occured in Borough Market and London Bridge. We are hoping to find a new date soon.
This 'moveable' restaurant from friends Conor Sheehan and chef Jackson Berg who previously worked at London’s Bistrotheque and Hoi Polloi, set-up in summer 2016 in Margate, Kent. Since then it has touched down in Liverpool in a disused warehouse at the Cains Brewery, part of the new Northern Lights development in Liverpool’s Baltic Triangle area. The restaurant is usually comprised of a structure design by award-winning architect Asif Khan. While the structure itself will not make an appearance, Jacksons food and Conor’s hospitality will. The duo promise a fun and exciting set-up with a menu offering internationally influenced British dishes.
